I'm trying to streamline configuration so that my clients can change text configurations as easily as articles. Already I'm using this module to do that with text on the component pages, but does it work in the emails sent out by these components?

I don't know... try!

Plugins only have effect on content that is passed through the plugin triggers in Joomla. So if the email component will do that, then it will work.
